Lunch Box Pockets

Just thought I would post a quick little recipe I make some mornings for T to take to work in his lunch box and two to have for breakfast.

You will need:
1 can of grand biscuits
2 pieces of sandwich sliced cheese cut in half
bacon
scrambled eggs
deli ham

preheat the oven to 350*.  you will need 2 biscuits per pocket so this makes 4.  flatten out two biscuits on one place the filling, for breakfast I do Bacon/egg/cheese & for the lunch pockets I do ham and cheese.  and then place the second flattened biscuit on top. to seal I crimp edges with a fork.  Then just pop them into the oven until golden brown. (my baking time varies from day to day so you will need to watch them)

worst pain so far

Yesterday I was prepping for a Pampered Chef show and chopped up some jalapeno peppers.  I scrubbed my hands with a nail brush and lots of soap but I guess I missed some. While in the car on our way to the show I removed a lash that was in my eye and holy hell the burning started. I started screaming, crying, and my nose ran like a faucet. So I show up at my party with make up on one eye only and it was red and puffy. LOL Nice!  Thank heavens I wasn't driving too.

Just a quick update about me and my rag tag crew.  Everything is good as of late, not a whole lot going on. 4 Element Paranormal is doing extremely well. And my Scentsy business if chugging along. Well I should have more to post here soon since I have quite a few things going at the moment. Oooohh Happy Fall!  The best time of year I think.

Scary trip to the ER

I've had a chest cold or so I thought off and on for 4  months now. On Friday 3rd I felt like I was being suffocated so I asked T to take me to the Emergency Room. Now I've gone down this road before a few years back I had double pneumonia and bronchitis as a secondary infection. However this trip got scary fast. When I arrived they hooked me up to all the vital monitors and when the doctor arrived to see me he became very concerned with my elevated heart rate. Of course I had the chest xrays done to check out my lungs for infection and they showed some congestion but nothing serious. Now onto finding out about my heart. I had an EKG, numerous blood tests, two breathing treatments, and tons of fluids pumped into me.  When I saw the doctor next he informed me that it may be a significant blood clot in my lung. Of course I freak out and start balling even though we didn't really know if this was the case yet.  C-scan later they determine that it is not a clot and that they don't know why my heart rate is elevated. So I came home with an inhaler, Prednisone, and a list of things I have to give up. I've put the list below.  Now I just feel like I need to be clean inside and out health wise and start living a better more nature based lifestyle more than ever.

List of stuff I have to give up:
  • coffee
  • caffeinated tea
  • caffeinated soda (goodbye my beloved diet Pepsi with vanilla)
  • chocolate (except a small piece once a week is fine)
  • extra spicy foods
  • any medication with a stimulant such as cold meds
  • short fast pace workouts

Bit off more than I can chew?

Maybe!   My head on a daily basis has ideas swimming around it. Some I think are good and quite often there are a bunch I really like.  This week is the "bunch that are good" week and  I'm trying to figure out how to make each one work out. What I need to do is start carrying a notepad in my purse so I can jot these down and not rush to remember and get everything done at once.

Container Garden

I'm so excited that my little garden on our patio is finally showing some results. My daisies, snap dragons, marigolds, chives, sage, basil, thyme, rosemary, lavender, and sweet basil are all doing great and were from the start. We had one tomato and two bell peppers that are almost ready to pick. And when I woke up this morning I found 5 jalapeno peppers.

Hi my name is Lindsay and I neglect my blog.

Wow I really suck lately, I used to blog pretty regularly but I guess I don't know may have a life now.
No seriously when I blogged alot I wasn't in a relationship and I had major depression so I didn't have other things to do really.  

Anywhoo,   Life has been good lately.  T and I are starting to see our apartment underneath all the boxes, the pets are finally settling in, 4-Element-Paranormal was in a local blog column and we have had 5 successful investigation recently,  and I'm sort of getting a handle on my issues.

Holy Crap it's been Awhile

Quite a bit has changed since getting home from our Vacation! T and I have an apartment which we are still trying to get organized and everything in it's place. We are both still looking for work but glad to have our own space. Other than that Disneyland was a blast, we got stuck in Cali for an extra two days but that was fine.  T had fun. it being his first time there and we got to experience Bats day in the Fun Park (goth day)

Disneyland!!!

T, myself, and the pets are all stressed out! Still looking for work, still looking for a second car, and still looking for other living arrangements. Sooo T and I are taking a break and re-charging so we can re-focus and make things happen. We are going away for the weekend to Disneyland, I'm hoping the happiest place on earth can work it's magic on us. T has never been so I'm excited to show him what he has been missing lol.

Just a post on WHAAATS UUUPPP

Finally got over my cold, just a minor throat irritation left but that is typical for when I get a cold.  Tim and I had our "Witchy" coming out party with my family. We celebrated the wiccian sabbat Beltane with a big feast. I did change up some things to make them comfortable and not to bring in elements that would contradict with their religion since it was at their house.  4 Element Paranormal had our 2nd investigation. We were asked to check out 4 locations at Bonneville Golf Course in Salt Lake City.  All in all we got 28 evp's and two pictures with a misty shape. Tomorrow is my first Scentsy Open House. So excited I love doing these kinds of things.  Anyway that is what is up with me!

Sick

Why is it that I could go through the winter in the northeast with my windows open while I slept and not get sick once yet when I get to Utah and the weather is warmer I get a freakin cold!  SUCK
It has been a week and I've been taking my cold medicine trying to rest and take it easy yet it feels like it is taking forever to get out of my system.  Right now I feel OK other than that uncontrollable coughing phase that usually hits at the end of the cold.  I must say though I have been eating much more healthy options and also added all natural juices to the mix to try and get over this faster.  I just hate being sick!

Feel Yucky

Don't ya just hate when you feel a cold coming on?  I feel like that tonight. Can't sleep, feel kind of fuzzy, and freezing.  I'm hoping it is allergies and we will see how I am tomorrow after I take my allergy pill. Other news Tim and I have all our gear for 4-element-paranormal and I got my Scentsy starter kit.

In a Box

I was looking through my blog and noticed I've been posting once a month only.  Crazy considering I usually have alot to say.  Right now T, myself,  Zero, and Mow Mow are all living in one tiny room at my sister's house.  Thank God for family but still it feels a little like I am in a box.  To make matters more interesting  we have some of our Paranormal equipment coming in and that is also piled up in the same room.  Fingers crossed peeps we find something soon regarding a place to call HOME!

update

Hi peeps,
Well we made it all the way to Utah from New York in our little rusty truck.  Both pets made it ok and Tim and I didn't even bicker once on the road.  We did have a few things happen;  flat tire in Ohio, pulled over in Indiana, and our muffler fell off in Wyoming.  Right now we are staying with one of my sisters until we find our own place (soon).  I also am signed on to sell Scentsy wickless candles which I am super excited for.  Other than that its just Utah as usual, no one can drive

Time for Change

With the move and the thought of going back to Utah I have been doing a lot of thinking lately. I think it is time to take stock in every aspect of my life and find what works and kick to the curb what doesn't. Ground rules need to be made and goals need to be set. This is my time to shine in my home state and I will not let psychos, angry ex friends, and anyone else stand in my way.

Revolution Update



That is how I feel today!  Gained back another 5 pounds so that brings my current weight to 240. (SIGH) It has been a stressful week and it is just beginning which is kind of scary. 30 day notice to vacate the house goes in today, we had to make arrangements to stay at a hotel for a week at the end of March with two pets, moving arrangements have to be made and it has to be a plan A and a plan B.  In regards to the moving either A) T enlists into national guard and from what he tells me they will cut him PCS orders which would allow us to have the military move our stuff,  or B) his orders don't come in time and we have to rent a UHaul and move all of our stuff from the house to storage then load it into the rental truck to again move all our stuff cross country.  Fingers crossed he gets orders! I've also been testing a few recipes for Celebrate With Lindsay blog so yeah extra sweets didn't help either.

Revolution Update

Well I didn't do so well last week and today I find out I gained 4 pounds. I know ups and downs are to be expected and I'm also aware eating the way I did last week certainly does not help.  Fingers crossed this week I get back on track!

T and I have a subscription to Netflix and I find their workout selection for instant watch movies isn't that great. However I do love dance workouts over traditional cardio so I have added to my queue a new workout to come every 4 movies. Just trying to keep things fresh so I don't get bored.

Road Trip Plans

We have come up with our road trip plans for when we drive to Utah in a few months. First stop Salem, MA.  Both T and I are intrigued by the witch tourism as well as the historical factors surrounding this city. 2nd stop will be Valley Forge in PA,  the site where Washington and his troops camped during the Revolutionary War. 3rd and last of the planned stops will be Gettysburg, PA.  Paranormal opportunities as well as the history of the area make this location top on our list of places to see. After that we will be on an adventure and see where we end up. Hopefully in Utah!!!

Revolution UPDATE

Week two since I've decided to blog about this little journey.  I've lost 2 more pounds this week YAY!!!
I have also been making small tweaks here and there such as the following;   when watching TV I get up and move around during the commercials, I walk up and down my stairs 10 times each day, I use divider plates now when I eat so I can portion my food out better, and instead of just walking to the mailboxes and back I walk around the block to the mailboxes. I'm not looking for a quick fix to being skinny I want to make small changes to a healthier me and I want it to last a lifetime not be a chore to upkeep.

Coping with Depression

Hi everyone,

I just wanted to share some things I have found to help me cope with my depression besides medication.
I'm not a doctor so please make sure you check with yours before trying any of these ideas.

My Mom sent me some aromatherapy oil that is supposed to calm and keep me grounded. I like the scent and it does help me calm down, I keep it in my pocket with me to help with panic attacks and when I just need to clear my head.  It is by DoTerra and it is their Balance Grounding Blend.

I recently tried a supplement that you can pick up at any drug store or walmart called SAMe.  SAMe is naturally produced in our bodies but some can have a deficiency (which I do). With in the first few days I noticed I could focus more and process my thoughts without the panic what if feelings I usually get.  The supplement I take was about 15$ at Walmart and is made by Nature Made.

So I hope this helps a little if you are in the same boat as I am.

You say you want a Revolution!

Has anyone seen the new daytime TV show The Revolution? Well I was inspired to start one of my own in fact we start today.

My Revolution Goals
  1. Make me a Top Priority for a change
  2. Fit into cute clothes from mall stores and be comfortable in them
  3. Better relationships (family, friends, love, pets, co-workers)

I also have some healthy lifestyle goals too. I find that if I set "weight loss" goals I don't ever achieve them but if I set "healthy" goals I not only achieve those but benefit from weight loss.  So far these are my accomplishments.

  • lost 22 pounds so far (from the time I got to new york to now)
  • dropped 2 dress sizes
  • upped my water intake to 6 8oz glasses a day then I can have my Pepsi
  • work out in the mornings after T goes to work
Here are my current Goals for being Healthy:

  1. Be under 200 lbs
  2. Lose 4 more dress sizes
  3. up my water intake to 8 8oz glasses
  4. get moving through out the day not just during my workouts
  5. portion control
Now for the embarrassing part the Stats:

  • Size 18
  • weight 245
  • current workout session 1/2 hr dancing with the stars DVD
So there we go this is my Revolution outline. I will post updates and mark them Revolution + title so you can follow along with my ups and downs.

How Walmart & The Yellow Pages Let me Down

T and I are trying to pack up the house so we can move everything into storage for a while until moving day actually comes. I HATE moving with a passion and it stresses me out to no end. Anyhow I looked in the local Yellow Pages to get the phone number for the closest Walmart to see if we can get some boxes for packing. I call and speak to customer service and then am instructed to call back around 8PM to speak to the night manager. I call back on a Friday night and get an Assistant Manager for over night crew on the phone, he tells me that if we can come in before 7AM the next morning he will have a cart of boxes for us. Easy enough I thought and took down his name (which we will refer to him as Manager D). Alarms set for 5:30Am Saturday morning!  T and I get up at the crack of dawn and reluctantly drive to the Walmart to ask for Manager D and retrieve our boxes. I speak to the CSM and give her Manager D's name and explain the situation. Now here is where Walmart lets me down, instead of telling me they do not have a Manager D at this location she proceeds to radio the other Managers to see if D is still around. I then get told that there are no boxes for me. I'm irritated yet calm and ask for her to check again, at this time another manager comes up front and tells me they don't give out boxes anymore. Confused I ask both to clarify if there was in fact a Manager D that works there. I am  told now not before when I first got there that they do not have a Manager D at their location and a snippy sorry. I pull my phone out and verify the phone number I called and am made aware that Yellow Pages has a number listed for my Walmart that in fact belongs to a Walmart that is 60 some odd miles away. NICE! So Manager D thank you for your assistance where ever you are.

Oh and We are still Searching for Boxes!!!

Here we go it is the middle of January and I'm just now getting my list of resolutions together. I am known for changing up my resolutions and how I choose them from time to time and this year I'm going with something new again. I came across the Alphabet List shortly before the first of the year and became intrigued to say the least. Basically it is a list of "To Do's" or "Resolutions" that one for each letter of the alphabet and they have to start with that letter as well.  So here is my list and wish me luck!


  • A) Attend school (start towards a degree)

  • D) Disneyland Trip with Family, T, and hopefully T's son

Carrots

On today's blog I want to talk about The Carrot. Not the orange veggie that is delicious with light ranch dip by the way, but the website The Carrot.com (link found below).  With it being the first month of 2012 I'm sure a lot of you have picked out a resolution or two that you would like to accomplish and I will be posting mine later on in the week. The Carrot.com is a tracking website, you can track everything from weight management, sex, blood pressure, and yes even your TV watching habits. So what does this have to do with those resolutions? Well it can help you accomplish those resolutions that you make from year to year but have never actually made them happen. One other feature that I would like to point out is that if there isn't a tracker for your resolution they do offer a free form tracker so you can custom track whatever you would like.  Try it out today @ TheCarrot.com !  Also I would be interested in hearing what some of your goals are for this year as well.

My Underwear Plotted Against Me

I'm very careful when washing my bras in the washer because I don't want them falling apart on me for a while. However yesterday all but one have the wires poking out of them. How is that even possible? Did they all plot together while in the laundry basket? I'm 98% sure that none of them were like this prior to me doing laundry. I guess I will have to do what I do best and go shopping for new ones. Any ideas on care or brands that last longer?

35th Birthday

Yesterday I turned 35, not sure how I feel about that one yet. I told my guy today that I think I will stop there and just celebrate turning 35 each year from now on. He had to work late yesterday so we had a late dinner of my favorite tacos and I made a drunken chocolate coconut/rum cake. All delicious! Also received a lot of birthday wishes from friends and family on facebook which was nice and made me feel a lot better being so far away from them. Now on the agenda for today; covering the gray hair.
